Gluten free, vegan shortbread



125g phase softened

65g caster sugar

1 tsp vanilla extract optional

200g Doves Farm Freee plain gluten free flour

50g cornflour corn flour

1/4 tsp xanthan gum


  1. Whisk phase and sugar until pale

  2. Add vanilla – if using

  3. Add rest of ingredients to form a dough

  4. Roll into logs and chill

  5. Slice to desired thickness

  6. Bake at 140 16 minutes until completely set

  7. Sprinkle with caster sugar when they come out of the oven
