Gluten free, vegan chocolate chip cookies

100g phase – melted and cooled

120g light brown soft sugar

70g caster sugar

1.5 tbsp flax seed (ground)

3.75 tbsp water

1 tsp vanilla extract

220g Doves Farm Freee plain gluten free flour

½ tsp xanthan gum

1 tsp baking powder

½ tsp baking soda

½ tsp salt

100g dark chocolate chips

  1. Mix flax see and water and leave to stand until thick (5 mins)

  2. Whisk phase and sugars until pale

  3. Add flax mix

  4. Add rest of ingredients to form a dough

  5. Weigh at 15 g (hospitality) 90 g (café)

  6. Bake at 140 for 8/16 minutes until just browned on the edges
